Want to look like a professional chef in the kitchen?
Oh, and without even trying?
I am a busy woman these days– elementary and middle school schedules, pick-ups and drop-offs, signing planners, packing lunches, planning and prepping dinners often, baseball practices and games, my own “run-me-around” work schedule, “refereeing” siblings, plus a few projects of my own, oh and a blog, and a wedding. My schedule is not my own these days, and I am lucky to have an amazing guy, and great kids. phew.
That being said, I am really beginning to appreciate velcro. Seriously, because trying to teach someone to tie their shoes and get everything else on my plate accomplished, and everyone out the door can be… err… How do you teach a little someone to tie shoes, because my “Bunny ear” technique ain’t workin’.
Enough of that.
Moving onto dinner.
I am on a mission to provide the family with foods they enjoy, which can be unique when their dad is a graduate of the Culinary Institute of America, and their culinary experiences consist of their father’s masterpieces, fried foods, fast foods, processed foods, bacon, butter, and bread. (Oh, hello? Everything I am NOT).
What is more challenging is trying to get everything plated in minutes– Gordon Ramsey– I could never work for you.
That being said, everyone in the family LOVES Tomato Basil Soup (me included). The perfect “homemade” tomato basil soup need not be homemade to be impressive. In fact, my “I am in a bind” tomato basil soup can be made within minutes and served up with a side of wheat toast and butter (or olive oil).
Ready for the secret ingredients?
Heat the following:
- 1 jar of your favorite organic tomato pasta marinara (this time around I used Bertoli Organic).
- 1 box Pacific Brand Vegetable broth low sodium
- Fresh basil
- Freshly ground pepper
- Artichoke hearts
- chopped sun-dried tomatoes (you may want to add these first, and blend)
- Fresh spinach
- Freshly grated parmesan cheese
