I was pretty excited, I am not going to lie (and the evening needed some cheer, trust me!), so I immediately whipped up something fun to send my sister off to school with. There was not too much in the house (that my sister would eat), so this simple, creamy, and sweet recipe was born.

Vanilla Coconut Custard
1 small baked yam (wrap in tin foil and cook at 350 degrees in oven, for approximately 1 hr- or until fork slips through yam)
Blend 3 tbsp hot water
2 tsp Raw Coconut Butter
14 drops Vanilla NuStevia
Blend all ingredients together until smooth, and sprinkle with Sea Salt to taste,
Serve with a few sprigs of serrated zucchini, and crumbled raw coconut butter
Serve chilled, or warm.
Talk about easy.
