Sugar and caffeine do “crazy things” to the body. Sugar is debilitating: Lacking in any nutritional value, sugar deteriorates the teeth and the internal organs, contributing to disease (including, but not limited to: diabetes, obesity, depression, arthritis, etc.) In addition, like caffeine; it’s addicting and mood altering.

Combine caffeine and sugar, and you are bound to wind up in the doctor’s office, and/or…  in the principal’s office (for misbehavior).

Call me an evil step mom, but when I am in “mommy role” (which is very often):

  • I don’t stop at fast food joints (trust me, they still get the stuff elsewhere).
  • I also don’t grill up hot dogs,
  • or pack lunches with processed and refined foods, or artificial ingredients (like cheese food, bleh, that stuff runs rampant in the snack aisle… 
  • I also do not use your average hydrogenated, sugar ridden peanut butter),
  • Oh… and I definitely don’t allow regular sodas at any meal.

That being said, I kid. I kid. While that may have sounded like a whole lot of “don’ts,” I go out of my way to make eating “healthier” enjoyable. (Thankfully B and I are on the same page).

In other words: I am really not that evil, I promise.

Friday night is Family Pizza Night! While I don’t join in the pizza fun, this has become a family tradition I love. Palio’s pizza is thin crusted. It is just the right amount of crunch, and topped with the perfect amount of cheese: a.k.a.: it is not smothered in cheese. (A Foodie and nutritionist: I always observe these things).

Palio’s is B.Y.O. Which typically means that one is supposed to bring their own cocktail. But with the family in mind, I decided to create my own B.Y.O. rules.

My line of thought: FRIDAY MEANS CELEBRATION and RELAXATION. There is no reason we should not all celebrate with a beverage of our choice. While we steer clear of the soda fountain (which equates to: caffeine, refined and processed sugars, artificial flavors, high fructose corn syrup, in addition to other ingredients I have no desire to learn to pronounce), I take advantage of the B.Y.O. and (B.Y.O.S.), or Bring [Our] Own Sodas.


While the family rule is: No Caffeine, the kids are loving Zevia (the caffeine free flavors, that is). Zevia has been around for a few years now. While I can remember when they barely had two flavors, I am impressed by the way they have taken over the health market shelves with their vibrant colors and “familiar” tastes. 

What is Zevia? 

Zevia is a more natural approach to soda. Sweetened with the natural herb (Stevia)*, according to their website: “ZEVIA contains none of the chemically processed artificial sugar substitutes, artificial colors, flavors or preservatives found in other diet sodas. ZEVIA is 100% natural, has zero calories, zero net carbs, zero fat, and little or no sodium (depending on flavor).” (*Zevia does contain sugar alcohols).

While carbonated beverages are not great for optimal digestion (and soda is blatantly never going to be a “health food”), if you are a soda addict, Zevia is one way to curb the cravings, transition away from addictive soda guzzling, or have a healthier option for you and the kids.

Soda is a treat— not something to be had at every meal (like American society would have us think)… or so says the evil step mom.

We do soda on special occasions (like Fridays)– which gives the kids something to look forward to and keeps costs down (as opposed to having it every night, or for use in lunch boxes).

On Easter dinner, the kids drank Grape Zevia from little wine glasses. It made for a fun family dining experience (and the 5 year old even managed to keep it in her glass :) ).

Easter baskets were a hit too, and knowing that the kids would be enjoying plenty of processed candy on Easter, I did my best to create a memorable, and “healthier” version of what I grew up receiving.

  • I found gummy worms, and other sugary treats that were without refined and processed ingredients (Whole Foods).
  • Instead of a Chocolate Bunnies, I found little glass piggy banks ($3.00 from the Craft Store) that we later decorated with paint (and ($1) play-dough and a drawing pad ($1.00) for the littlest– and baseball cards for the boys).
  • Because we had our fair share of candy-packed Easter egg hunts, B and I hid Easter eggs with loose change around the apartment. The “special” eggs had… a DOLLAR!
It was fun and we managed to do it in a way that did not involved spending a fortune on “higher-end, organic candy” or giving in and purchasing the “cheap stuff.”
Sugar. Sugar. Sugar. It is EVERYWHERE. It can be a battle but having a healthy family is all about transitioning, and providing healthy options and more healthful alternatives. It is a step process. There is always something healthier available. And with some creativity, you can certainly find a way to do it on a budget. Start kids young. It is so much easier.
As for Soda… If you don’t want to spend the money on canned beverages, try mixing carbonated water, fresh lemon, and stevia (More to come on that).

Who: Sucralose is a form of chlorinated sugar. It is produced synthetically by replacing three naturally existing chemical groups in sugar with three atoms of chlorine. (Also known as Splenda but will appear on packaging as sucralose as well).

What: Much sweeter than sugar itself (600x sweeter) and far lower in calories, it is used in replacement of sugar to reduce the amount of calories reported on food packaging. It is considered a “safe” replacement for “sugar sensitive” individuals (i.e. diabetes) because it is not absorbed like sugar into the bloodstream.

Where: Commonly seen in low-calorie and artificial foods like: candy, juice, soda, cereal, and gum … etc. etc.

My thoughts: The following things come to my attention, specifically:

“synthetic”

“replaced”

“[removed] naturally existing”

“chlorinated”

Sugar (from sugar cane—not fruit, beets, honey, etc.), has no nutritional value. It is more, or less, like adding a spoonful of empty calories to food.  Like a drug, it can also be addicting and debilitating. Now take this sugar, [which yes, in it’s purest form is “natural” (but so are common drugs—like “marijuana,” for instance)] and use a synthetic process to disrupt it’s natural chemical structure, in order to create a form of chemically processed sugar that no longer contains calories (and by the way, the reason sucralose can claim: “no calories” is because it cannot be properly absorbed by the body).

Wow. What a charmer.

Calories are not the bad guys.

Calories, the right calories (and sugars) from wholesome foods (fruits and veggies, for instance) can be wonderful sources of energy and nutrients.  You don’t often hear of people being addicted to (organic) apples, but you do hear of people being addicted to soda, dairy, sweets, and baked goodies (and even condiments).

On top of that… chlorinated?

I am laughing but the first thought that comes to mind is a swimming pool…

A quick Google search of “chlorinated sugar” will give you a wide variety of articles ranging from “it is fine” to “stay away.”

The obvious answer to me is: STAY AWAY.

If you are looking for energy, reach for something naturally sweet that contains nutrients. After all, nutrients (vitamins and minerals) and natural sugar (that will gradually be absorbed into the blood stream and increase glucose levels in the body) is what the body is yearning for (not a donut). Once it is satisfied, you are good to go- go- go.

Alternatives? Raw honey, agave, and Maple Syrup Grade B. But if you are looking for something naturally low-cal to carry with you… I vote Stevia.

Contest and Quick intro to Stevia:

Growing up, I loved me some chocolate candy bars, soda fountains, powdered donuts, gummies, icing—you name it… I loved it. When I started to eat more healthfully, I switched to “diet safe” artificial sugars, most commonly, sucralose. While it may have helped my waistline initially, I still craved sugar. I try to avoid sugar for many reasons, but I am not afraid to admit that I like my life sweet. Dear Diary of a Nutritionist…

“I am looking for a cost effective and healthy alternative to coffee.  Then, let’s say I do drink coffee, what is the best way to enjoy it?” -Mary

Caffeine is quite possibly the most used and abused “drug”  there is… and Coffee is the ringleader. A coffee-bean, which naturally contains caffeine, is roasted, ground, and then brewed with boiling water, in order to become one of America’s favorite stimulants.  Caffeine is considered a drug, and it is a member of the class of methylxanthine chemicals.  These are the same chemicals that are commonly used in medications that aid in breathing.

Where alcohol depresses the central nervous system, caffeine stimulates it.  Which means it is responsible for increasing…

  • heart rate,
  • blood pressure,
  • respiration (it can open tight airways),
  • kidney function,
  • amount of stomach acid produced,
  • gastrointestinal activity  (it can act as a mild laxative) and,
  • brain activity.

Due to these metabolic effects, frequent consumption of caffeine can lead to heart problems, irritability, anxiety, acid indigestion, inflammation in the stomach and intestines, and insomnia. It is also responsible for the depletion of minerals, and it decreases the absorption of calcium and iron (which can than lead to osteoporosis, etc.). Unfortunately, the negative side effects of caffeine do not end there.  An over-consumption of caffeine can lead to birth defects and miscarriages, adrenal exhaustion, etc.  Enough of the depressing news…We will leave it at that.

So why do we drink coffee, and why has Starbucks been such a blazing success?

In a society where there is “never enough time” to get a full nights rest, and everyone is perpetually “on-the-go”… Coffee makes us “feel” awake.

In other words, coffee acts like a fake source of energy.  I say fake, simply because it does not actually give us real energy, it only temporarily increases certain metabolic functions, like heart rate, that make us feel energized.  No amount of coffee (which has highly-acid forming effects on the body’s pH) makes up for lack of sleep, which alkalizes and heals the body.

In addition to “energizing” the body.  There are, of course, plenty of people who drink it merely for the taste, and opt for the decaffeinated versions.  I cannot say that I agree with “decaffeinated” beverages, as in order to make something decaffeinated, it has to be treated (and something that is “treated” is not natural).  Unfortunately, many decaffeinated coffees are treated with chemicals.

Here is the good news!

Occasional, and moderate consumption of coffee is “fine,” because a healthy diet is much more crucial to an overall healthy lifestyle, than to worry about moderate coffee consumption (Try to get the fresh stuff). Generally speaking, however, the more we come to rely on coffee (caffeine) as a source of “energy,” the more of it we need to consume, as our tolerance builds.  But if you love the taste, and can stop at one cup, don’t beat yourself up over it.

Just as alcohol, pharmaceutical medication, and recreational drugs, etc. are acid-forming in the body, so is caffeine, and therefore coffee.  If you are looking to detox, or increase your overall health and well-being, you will want to focus on more alkaline-forming foods, and thus decrease coffee consumption.

Luckily, unlike other drugs, withdrawal from caffeine tends not to be severe.  The most common negative side effects are headaches and fatigue.  (Which of course is relatively insignificant when compared to the withdrawal from other addictive substances).

If you like the taste of coffee, and are looking to drink something more alkaline-forming, I recommend substituting coffee beans, for carob. Carob is a member of the legume family.  The pulp of these carob pods is sweet, and tastes remarkably similar to a mixture of cocoa and coffee, sans the caffeine. Raw Carob is also alkaline-forming, where as, coffee and cocoa are acid-forming. If you are a coffee drinker, try to ween yourself off of it by filling your mug up with a concoction of hot water and carob powder– fill it up half way, then fill the rest of your mug up with your normal coffee (whether it be regular, or decaf).

The store was out of RAW Carob, so I picked up Shiloh Farms Carob powder.  It is roughly $4.00 for a 12 oz bag.  Generally, I will try to use a RAW Cocoa powder, as it is less processed, but any unsweetened cocoa will do.

“Coffee” Alternatives

For a coffee with less caffeine (and thus more alkaline)…

TRY: 1 part coffee + 1 part “hot carob water” + sweetener + “milk”

If caffeine is really what your seeking…

TRY:  1 part “hot carob water” + 1 part “hot cocoa water” + sweetener + “milk”

For even more of a caffeine boost…

TRY:  1 part “hot cocoa water” + sweetener + “milk”

(Generally, 2 tsp, or 1 tbsp, of carob powder, mixed with 1 cup of hot water, will create a nice flavor.  If a recipe calls for cocoa, 1 tbsp of raw cocoa powder, mixed with 1 cup of hot water, should be sufficient).

Cocoa, although acid-forming, contains less “caffeine-like” substances than coffee.  It is a mild stimulant.  Make sure you make your own cocoa from scratch, by mixing unsweetened cocoa powder with your own nut milk (and/or hot water), and sweetener.  I prefer to use NuNaturals Brand, Vanilla NuStevia, to sweeten.  If you use an instant packet of hot cocoa, you will be mixing in tons of additives and/or sugar.  Generally, restaurants like to make their hot cocoa– “comforting,” by adding in tons of cream and sugar.  Your hot cocoa will be delicious too, but it will be entirely more alkaline-forming, and thus, “healthier.”  Check out this Real Hot Chocolate, article, and recipe!

“Milk”– if you have been reading Diary of a Nutritionist, you know how I feel about milk.  Instead of dairy, try using an almond or nut milk.  If you have to use milk, make sure it is Organic WHOLE milk.  The milk fat is easier to digest than the milk protein.

Sweetener: As I mentioned earlier, I love NuNaturals Vanilla NuStevia.  I also enjoy their NuStevia powdered packets.  Sugar and sugar substitutes (i.e. splenda, nutrasweet, sweetnlo, etc.), are chemically treated, and are not processed by the body.  Substitute stevia (a natural herb/root).

THE NEW COFFEE:

Carob (with a sprinkling of raw cocoa powder)+ Almond Milk + NuNaturals Vanilla NuStevia– great taste, without the side effects…  (I use the Magic Bullet to mix the ingredients and give it its frothy top).

P.S.  All of the above ingredients can be cost effective.  Carob = $4.00 per 12 oz bag, Almond Milk is about $3-4, NuStevia is about $9.99 for a box of 100 packets.  You will only need about 1, as they are much sweeter than sugar. You can make a lot of “coffee” with those ingredients.  Oh!  And improve your health.  That has got to count for something ;) ~~~~~~

Chocolate Banana Pudding

My little sister, who hates all things “healthy,” absolutely LOVES this chocolate pudding (Can you tell I am just a tad bit in love with chocolate pudding).  She licks the bowl, blender, etc.  You may too.  Watch out for your tongue- blades are sharp.

too good. you won't believe the ingredients...

  • 1 medium-large ripe banana
  • 1/2 large avocado
  • 14 drops of Vanilla Stevia
  • 1/2 packet of powdered Stevia
  • 5-6 tbsp cool water
  • 1 pinch of sea salt
  • 1 squirt Agave Syrup (aprx 1-2 tsp)  *Optional
  • 2 tbsp raw cocoa

Blend all ingredients in your blender or Magic Bullet.  It makes about 1 serving.

The average American consumes over 100 pounds of “white sugar” a year

This amount does not include the amount of artificial sweeteners (like aspartame, saccharin and acesilfame-K) that are chemically processed and used to sweeten popular diet foods and soda pops. Particularly, sucralose (brand name, Splenda)– is produced by the chlorination of sugar.   Yum, chlorinated sugar. Not quite!

As discussed in the article, pH and The Secret to Beautiful SkinBeautiful skin starts on the inside.  “Your pH and thus, your diet, is reflected in the health and overall appearance of your skin.”

If you remember from a previous article discussing acid and alkaline forming foods, White Sugar is HIGHLY ACID-FORMING. Even though, society tells us that “diet” and artificial sweeteners are better for dieters, or the “health conscious,” this is far from the case.  In fact, studies have show that these calorie-free alternative may be even more debilitating and just as, if not more, acid-forming than sugar itself.  YIKES!

Remember, we want to eat alkaline forming foods for a healthy body, and thus healthy glowing skin– sugar and artificial sweeteners are not part of this equation.

The good news!  There is an alternative to sugar and artificial sweeteners called Stevia*.  Stevia is a more pH-friendly (in fact, it can be alkaline-forming), non-caloric, “sweetleaf” or herb.  I love cooking with Stevia, and concocting creative beverages and sweet treats with it.  It is my favorite, “not-so-secret” ingredient and you are bound to find it in almost every one of my recipes.

*Update:  I feel I must point out, while Stevia is a better choice than sugar and artificial sweeteners, in addition to being acceptable for diabetics, I do think the closer we can get to enjoying “basic” foods, supplied entirely by nature, is always better (i.e. using sweeteners like agave, dates and raw honey)… That being said, I do still use Vanilla NuStevia myself, and  use powdered NuStevia when cooking and in creating recipes for family and friends.  I recommend NuNaturals powdered NuStevia to everyone  using sugar and for those individuals looking for a “calorie-free” alternative to artificial sweeteners.  Powdered NuStevia includes maltodextrin, a food grade carbohydrate derived from grain.  I have found it to be easily digestible, in using it over the years.

This was so uniquely delicious that I could not wait to eat it (hence why is only 1/2 full).

Love those pudding snack packs you used to enjoy as a kid?  I did.

This is a wonderful and healthy alternative.  Just don’t tell anyone what is in it. :)

Chocolate Pudding with a Coffee Twist  (Serves 1 and 1/2)

  • 1 ripe Avocado
  • 4 tbsp water (depending on the size of your avocado you may need to adjust this)
  • 1 tsp raw cocoa
  • 1 tsp raw carob (or… 1 tsp more cocoa) – Carob gives it its “coffee” flavor
  • 20 drops NuNaturals Brand Stevia
  • 1 generous squirt of agave syrup
  • 1 pinch of sea salt

Blend all of your ingredients into your blender or Magic Bullet and blend until smooth.  Pour into a dessert glass and store in the fridge until chilled (aprx 1-2 hrs).

I found this recipe simple, yet sweet and delicious.  I will do a bit more experimenting with this recipe as time allows.

Real Hot Chocolate

Sugar, corn syrup, modified whey cocoa (processed with alkali), hydrogenated coconut oil, nonfat dry milk, less than 2% of salt, dipotassium phosphate, carrageenan, artificial flavor, mono- and diglycerides.

Not exactly, right?

In a world where everyone is on the go, or too _____________ , to take an extra minute, we seem to find ourselves living life out of little packets of premixed, artificial and  ”treated” ingredients.

Have we forgotten what real food is?

Real food, utilizes real ingredients.  Real ingredients have more flavor and are processed by our bodies much more readily than the fake stuff.

You can start making better choices for you and your family, one step at a time and you can start with hot chocolate.

Instead of opting for a packet of hot cocoa, try this fun, easy and deliciously warming, hot cocoa recipe:

When you mix up the ingredients in the Magic Bullet, it produces a delicious froth.

In your magic bullet add:

1 and 3/4 cups hot water

1 tbsp unsweetened cocoa powder

3 tsp of NuNaturals brand Stevia powder  (or sweeten to your liking)

Mix it all up in your Bullet and wah-la!  you’ve got a delicious, healthy, sugar-free and non-dairy delicacy.

(If you’d like to make it more creamy- trade the hot water for hot Almond Milk, or do half Almond Milk and half water– I like Pacific brand).

Now sink into a fluffy robe and snuggle up by the fire.
